Ingredients
500 g cake mix
250 g brown sugar
1 1/2 cups (375 ml) black tea
1 tsp vanilla essence
500 g self-raising flour
1 egg
If you don’t have self-raising flour, you may use regular cake flour but add 1 rounded tsp baking powder per cup of flour.
Method
In a bowl pour black tea onto the fruit, sugar and vanilla essence and leave overnight. the next day add flour and lightly beaten egg. Mix thoroughly. Pour into a lined load tin and bake for 1 hour at 180 C. Cut thin slices and spread with butter if desired.
