Ingredients:
500 g cooked white fish, flaked (I used frozen I & J hake medallions and cooked them for a short time on low heat in the microwave)
250 g cooked potatoes, mashed
2 Tablespoons melted butter
3 eggs, separated
125 ml (1/2 cup) Cheddar cheese, finely grated
50 ml milk
2 teaspoons parsley, finely chopped
1 tsp salt
1/4 teaspoon pepper
Method:
1. Combine the flaked fish, potatoes, melted butter, 2 egg yolks and milk in a bowl.
2. Place in a shallow ovenproof dish and bake in the oven at 190 C for 20 minutes.
3. Meanwhile, whisk the egg whites until very stiff but not dry. Beat the remaining egg yolk and fold the egg whites into it, together with the grated cheese, parsley, salt and pepper.
4. Spread the egg and cheese mixture over the fish and return to the oven immediately. Bake until the top is brown, about 10 minutes.
Serve at once.
Serves 4. I adjusted the measurements the moderate helping of 1 piece of fish and 1 cooked potato per person.
