Middlecut patties

middlecut pattiesIngredients:

1 tin Middlecut fish (you’ll find it near the tinned tuna)
1 cup fresh breadcrumbs (3 slices bread)
1 onion, finely chopped
1 Tablespoon chopped parsley
1 dessertspoon mayonnaise
a little tomato sauce
a little Worcester sauce
salt and pepper

1 egg
flour

Method:

1. Mix all ingredients in a food processor. Include the fish bones as they are a good source of calcium and won’t even be noticed when they are chopped up.
2. Make a ball, roll in egg then four. Flatten and fry in oil.

Good to freeze for lunches.
